Healthy Turkey and Cabbage Stir fry

I want to apologize for this post not being very pretty and very basic but please bear with me while I learn how to blog. This is one of my favorite easy and fast meals to make. I love it because it tastes good and its a great way to use whatever veggies I have in the fridge and to eat a meal with a lot of veggies which we all know is hard sometimes. My husband, who normally complains when I make healthy food, loves this and its always a hit with visitors too. I love cooking with cabbage because it is so good for you and in pretty inexpensive. It’s one of those things that you can eat a lot of because its mostly vegetables but you feel good afterword unlike the majority of fast weeknight meals that are usually heavy, full of preservatives or just plain unhealthy. I try to always keep the ingredients for this in my fridge and ground turkey in my freezer so that if i have had a long day and am tempted to just stop and get fast food on my way home I know that I can make something much more satisfying relatively quick as soon as I get home instead. I don’t ever follow a recipe with this; like I said, whatever I have in the fridge. Sometimes I use ground chicken or even shredded chicken sometimes I use bell peppers, leaks, zucchini.

This meal takes about 15 minutes to prepare.

Instructions:

1)Start by browning ground turkey,  I season with some salt and pepper. I usually have my burner on a medium-high heat (like a 7)

  • another delicious option is turkey sausage, If I can find the kind in the casing that is not cooked yet. I squeeze it out of the casing and cook as normal. I like this method because the meat is already seasoned and other than some salt and pepper for the vegetables I don’t need any other seasoning

Brown the Turkey

2) While meat is browning I cut up my onions  and Mushrooms (if I didn’t buy them pre-sliced)

3) Add onions and mushrooms to meat and saute until soft about 3 to 5 minutes

5) While mushrooms and onions are being sauteed, slice cabbage into thin strips. Stir veggies and meat occasionally

6) When veggies are tender add cabbage and any remaining seasoning, stir until combined (pan will be very full but don’t worry the cabbage cooks down). Put lid on so cabbage can steam and so the heat stays in but remember to stir occasionally. Continue this process until cabbage is tender.

Step 3

7) Serve either alone or with rice.

Ingredients

  • 1 lb. Ground turkey
  • 1/2 head of cabbage (thinly sliced)
  • 1 package sliced mushrooms
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 Tablespoons coconut oil
  • Salt and pepper to taste

Instructions

  1. Brown turkey in oil in a large pan, as onions, garlic and mushrooms and sautee until soft.
  2. Add cabbage and seasoning and stir until combined. Put to in to sweat cabbage until cabbage is tender by 1/3rd, stir occasionally. Remove like and

  4. Serve over brown rice
